4 cod fillets
2/3 C mayonnaise
1/4 C grated parmesan cheese
1/4 C chopped green onions
1 tsp Worcestershire sauce
* Place fillets in 8-in square baking dish coated with cooking spray.
* In a small bowl, combine the mayo, cheese, onions and worcestershire sauce.* Spoon over fillets.
* Bake, uncovered at 400 degrees for 15-20 minutes or until fish flakes easily with fork.
I used only two fillets because I was cooking for two people. I love this recipe because it is easy to adjust.
The second recipe is Garlic Mushroom Rice. This is one of JJ's favorite recipe. I created this recipe several years ago and it is a staple.
For the rice you will need rice (of course), can of cream of mushroom soup, can of mushrooms, garlic powder, and the secret ingredient Frank's hot sauce.
Cook rice according to directions (I use minute rice).
Then place back on the stove, on medium heat and mix in all the other ingredients. Now, I do not measure the garlic powder (probably about 1 and 1/2 Tbsp) or the hot sauce (probably about 1/3 c).
Now, I know: Fish = good choice; Rice = bad choice. But it is comfort food and after all the running we have done the past three days, we both needed comfort food. And it was all cooked at home unlike the last two days which has been bring something home after the matches. I told myself that I was going to back to healthy cooking after the holidays. So, this is a start. I just need to plan menus a little better to adjust for late nights out due to activities. I do hope you enjoy the recipes. Let me know if you give them a try.
