Want a great recipe...

Well, I have got two for you.  One is called Parmesan Baked Cod and it is SO YUMMY!! The recipe comes from tasteofhome.com.  You will need the following:

4 cod fillets
2/3 C mayonnaise
1/4 C grated parmesan cheese
1/4 C chopped green onions
1 tsp Worcestershire sauce
 * Place fillets in 8-in square baking dish coated with cooking spray.
* In a small bowl, combine the mayo, cheese, onions and worcestershire sauce.
* Spoon over fillets.
 * Bake, uncovered at 400 degrees for 15-20 minutes or until fish flakes easily with fork.
I used only two fillets because I was cooking for two people.  I love this recipe because it is easy to adjust.

The second recipe is Garlic Mushroom Rice.  This is one of JJ's favorite recipe.  I created this recipe several years ago and it is a staple.

For the rice you will need rice (of course), can of cream of mushroom soup, can of mushrooms, garlic powder, and the secret ingredient Frank's hot sauce.


Cook rice according to directions (I use minute rice).  
Then place back on the stove, on medium heat and mix in all the other ingredients.  Now, I do not measure the garlic powder (probably about 1 and 1/2 Tbsp) or the hot sauce (probably about 1/3 c).
Now, I know: Fish = good choice; Rice = bad choice.  But it is comfort food and after all the running we have done the past three days, we both needed comfort food.  And it was all cooked at home unlike the last two days which has been bring something home after the matches.  I told myself that I was going to back to healthy cooking after the holidays.  So, this is a start.  I just need to plan menus a little better to adjust for late nights out due to activities.

Ahh...McDonald's Sweet Tea

Well, in my attempt to keep up with my new year's resolution to give up soda, I have found a new weakness. 
Yep, McDonald's sweet tea.  Now, I should say right here, right now - I have NEVER been a sweet tea drinker.  I like my hot tea occasionally, but I have never been a fan of ice tea.  I think I was the only in my family, when we were all growing up, that never drank the stuff.  However, today I got one from McDonald's and well, that picture is the second one I have had today.

Yes, I know - it is just as bad for me as the soda was because of all the sugar.  And I will probably ask from unsweetened from now on and put Splenda in the tea.  But my goodness, I never realized how good their tea was until now. 

So, I must say to my mother and my grandmother (she can hear my in heaven), sorry I never drank your tea!  Love you both!

HAPPY 2012!!!

Well, here it is January 1, 2012.  That fabulous time of the year when we make resolutions and then get to December 31 and realize we did not folow through on a single one.  Well, I vow that this year is going to be different!

Last night, Johnny asked me if I had any resolutions and I said no.  I then asked him if he had made any.  He said "yeah, to lose weight."  I started laughing immediately.  He then preceeds to say "Well, it is one I definitely can keep this year."  And you know what, he is right.  If one person can keep a resolution to lose weight this year, it would be him.  He is so funny sometimes.

Anyway, I do have several resolutions that I want to try and keep this year.  I know that I may not keep them perfectly; however, I believe these are ones that are pretty easy to follow.

1 - Workout at least 3 times a week.  If I do more, then YAY ME!  I think 3 is an obtainable goal and one that is easy to achieve.

2 - Except for one cup of caffeine in the morning, caffeine is gone!  Also gone is carbonated beverages (ie. Soda).  I am giving up soda for the first time in my life.

3 - Read my bible at least for 30 minutes each morning.  Yes, 30 minutes may not be alot of time, but it is better then I am doing now which is none!

4 - For the final resolution, I am going to try 2 new recipes a week.  There is a reason behind this resolution.  I am getting tired of feeling like I am cooking the same thing over and over again.  Plus, this will give me the opportunity to try more healthy recipes for the family and share them with you all.

I guess I have one more final resolution - to write in my blog more.  I enjoy sharing these ups and downs with you all.  And I appreciate you more than you know for reading my blog.  So, from me to you - THANK YOU!!  Here is to an exciting 2012!!

Finally - here is the lastest update on Johnny.  December 27th was three months post-op.  Johnny is down a little over 90 lbs and looks GREAT!!  He has done so wonderfully and I am very proud of him.
